The San Gabriel Ranch in Perspire, Honduras, has been owned by the Cruz family for more than 50 years. Now managed by Carlos, third generation owner, their activity focuses on the modest farming of cattle. Every day, from 5:30 to 9 in the morning, they feed, examine and milk the cattle. After, Carlos, his uncle, who lives on the farm, and the other workers have the traditional Honduran breakfast: scrambled eggs, refried beans, cheese, avocado, corn tortillas, and a cup of black coffee. Nowadays, they own sixteen cows, two bulls, and one dog named Prince.
